1 tablespoon vegetable oil
1/2 green pepper, chopped
3 small summer squash, sliced
Salt to taste
4 (7 inch) flour tortillas
1/2 cup shredded Cheddar cheese
1/2 cup chopped tomato
- Heat the vegetable oil in a skillet over medium-high heat; cook and stir the green pepper in the hot oil until fragrant, about 3 minutes.
- Add the squash in three batches, making sure the first has softened slightly before adding the next. Season with salt.
- Heat the tortillas under the broiler for about 20 seconds. Spoon the squash mixture into the center of the tortillas; top with the Cheddar cheese and tomato. Roll into a burrito to serve.
